Cupcake Chronicles: Rainbow Chip for No Reason

My little brother is an extremely picky eater; I can probably count on my two hands the things he actually eats. And my parents, bless their hearts, indulge him! What we do share, though, is our love for cupcakes (though he only likes the vanilla or yellow varieties!).

Well, a couple of days ago we were both having major cupcake cravings, so we had a baking and Blockbuster session at my mom's house! We picked up boxed cake mix and and few DVDs and had ourselves a party!

We bought Betty Crocker's SuperMoist Cake Mix in Rainbow Chip (Vanilla cake with pudding, and rainbow sprinkles mixed in) and tried a few of my 25 Ways to Doctor Store-Bought Cake Mix tips:

1. Substitute butter for oil [We used one stick of softened butter]
4. Substitute milk for water [Mom had 2% in the fridge so that's what we used]

After 17 minutes on 350; A nice light golden color, if I do say so myself!

The cupcakes were finished off with cream cheese frosting (half of which we dyed a seafoam green color, just for fun!). My little bro was trying so hard to be a good froster, but I think we should make more cupcakes so he can have some practice :)

He was so bummed about his frosting job that he told me "Okay, Tiera, you eat all the ugly ones and I'll eat the good ones", lol!

They turned out deeelicious! They were dense and moist, and rich (but without being overwhelmingly heavy). And using the butter enhanced the flavor while preventing the oily residue (gross) that often plagues cupcakes made with boxed mix.

So let's recap: Scrumptious cupcakes, funny movies, hanging out with my little brother, and finding a new hobby for us to do together... Good times indeed :)

I wanna know, when's the last time you baked cupcakes for no reason?
